Low-fat Mashed Cauliflower

Introduction

I was craving mashed cauliflower, but my post-Thanksgiving gut couldn't handle anything rich. I threw this together and didn't miss the butter! I was craving mashed cauliflower, but my post-Thanksgiving gut couldn't handle anything rich. I threw this together and didn't miss the butter!
Number of Servings: 2

Ingredients

    1 head cauliflower, steamed
    1/2 c milk (rice, soy, cow, almond)
    2 T garlic powder
    1 t black pepper
    1 T dried parsley
    2 T shallot salt (or onion salt) - or to taste

Directions

Place ingredients less salt in food processor and puree until smooth. Add salt slowly to make sure it's to your taste.

Makes 4 1/2-cup servings (but with all that nutrition, who'd only want a half cup?!)
