2 cups Great Northern beans
1 cup barley
1 cup chopped onion
1 cup chopped carrots
1 tsp garlic
1 bay leaf
1 tsp thyme [I use 1 sprig of fresh thyme]
1 tsp pepper
8 cups water
14 ounces low sodium diced tomatoes
Soak beans overnight in water. Drain.
In a large soup pot or slow cooker combine all ingredients except the tomatoes and simmer until beans are soft.
[2-3 hours on the stove top on on high in the slow cooker, or 4-6 hours on low in the slow cooker. Longer will not hurt the soup]
Approximately 20 minutes before serving, add the tomatoes and allow to heat through.
