Pumpkin Pie, Eggless & from Scratch

Ingredients

    Pumpkin, cooked, 2 cup, mashed
    Tofu, soft - 1/3 cup
    Cinnamon, ground, 1 tbsp
    Cardamom, ground, small pinch
    Borden Eagle Brand Condensed Milk, 1 can
    Water, tap, 1 cup (8 fl oz)
    EnerG Egg Replacer 1 1/2 tsp
    Nutmeg, ground, 1 tsp
    Allspice, 1 tsp

    Graham Crackers, plain, 1 cup, crushed
    Smart Balance Buttery Spread, 3 Tbsp,
    Sugar, .1/4 cup

Directions

Melt Butter, combine with crushed graham crackers and sugar. Miix. Smoosh into pie pan.

Mix all remaining ingredients together in a blender.

Pour into a pie crust. Bake at 375 degrees for 45 minutes. will be soft in the middle.
