Ingredients

Turkey leftovers (carcass after most of the meat has been removed. Estimating ~1lb meat is still on the bird)
1 large onion, chopped
1 bag carrots, peeled and chopped
1 bundle celery, chopped
2 large tomatoes - diced
2 cups of brown rice, cooked (yielding 4 cups)
1 cup wild rice, cooked (yielding 2 cups)
Directions
Place turkey in large pot and fill with enough water to cover. Cook for 1-2 hours at medium heat, adding water as needed.
Allow to cool.
Remove turkey and skim broth.
Remove bones from turkey and return meat to the pot.
Add chopped vegetables and cook until tender.
Add cooked rice and cook for an additional 15-20 minutes.
