Easy solution for lots of Beef meals made ahead of time. Also, great by itsellf as the main course! Recipe found in Low Carb for Dummies Book. My revision uses the leaner larger cut of a Brisket. Ingredients

6Lb. Roast or Beef Brisket, trimmed of fat.
1/4 c. Olive Oil
2 tsp. of Salt
2 tsp. of Black Pepper
1 Tbsp. of Garlic Salt
1/4 c. Worcestershire Sauce
Directions
Preheat Oven to 225*. Trim any excess Fat. Coverr wtih Seasonings (mix in bowl & rub into the meat with a 1/4 c. of Olive Oil).
Place in Roasting Pan, pour Worcestershire over it, & cover tightly. Bake for 8 hr. Skim the Fat from the juices when done & serve A Jus'.
*Great left overs fo Wraps, salads & of course BBQ.
