Ingredients

Sweet potato, fresh (boiled), one medium, 5 serving (remove)
Land O Lakes, Spreadable Butter with Canola Oil, 1 Tbsp, 3 serving (remove)
Milk, 1%, 1 cup (remove)
Directions
Makes 6-8 half-cup servings
Peel five medium-sized sweet potatoes (and remove any eyes). Cut into chunks, and boil in water on a conventional stove or microwave on high until tender (25-45 minutes).
Drain liquid thoroughly and place the potatoes in a large glass bowl. Add butter or margarine, and salt and pepper to taste, and mash with a fork or a hand-masher. (Lumps at this stage are fine.)
Using an electric mixer, mash potatoes with a little bit of milk at a time until you reach the desired consistency.
