Terri's Tasty Fritatta

Ingredients

4 cups eggs substitute
1 box frozen chopped spinach thawed and wrung dry
1 cup frozen carrots, broccoli and cauliflower, thawed
1 cup fresh zucchini, diced
1/2 red onion, diced
1tsp minced garlic
salt, pepper, crushed red pepper flakes to taste
Directions
prep the vegetables. Mix the eggs with the egg whites and add 2 tablespoons of ice water to eggs while mixing. Add vegetables. In a baking dish, spray with olive oil pam and pour in egg mixture. Baking time will vary with how you like your eggs. I like mine cooked to death, so leave the mixture in for an hour at 350.
Cut into 4 equal sections. One section per serving.

I do mine in a large, non-stick pan sprayed with Pam (Olive Oil), and cover it with a glass cover. I prefer mine moist, but nut runny. It usually takes only about 11-15 minutes on low. I love these for the variety of vegetables, mushrooms, etc. I can add to change the flavor - including fruit. - 11/29/10
