Introduction

I've tried a lot of variations on Mock Hollandaise and this is the best one I've found yet. It's creamy, it doesn't curdle, and reheats perfectly. This recipe can be easily doubled. Number of Servings: 5

Ingredients

    1/3 cup reduced fat buttermilk
    1/3 cup Olive Oil Mayo (or canola oil mayo)
    1/2 tsp fresh grated lemon rind (about 1 small lemon)
    1 tbsp lemon juice
    1 1/2 tsp dijon mustard
    1/4 tsp ground black pepper
    1 1/2 tsp unsalted butter

Directions

Combine the first 6 ingredients (through pepper) in a small saucepan over low heat, stirring well with a whisk. Add butter, whisking until it melts. Keep warm.

Makes 5 (3 tbsp) servings
