Scallion Cheddar Popovers

Number of Servings: 6

Ingredients

    1 cup milk
    2 large eggs
    4.5 oz all purpose flour (about 1 cup)
    1/4 tsp kosher salt
    1/2 cup shredded cheddar
    1/2 cup scallions, whites and greens thinly sliced

Directions

Preheat oven to 400 degrees.

Combine milk and eggs in a bowl. Measure out flour by weight or lightly spoon into a measuring cup and level with a knife. Add flour, salt, cheese, and onions to the milk egg mixture. Whisk until smooth. Let rest 30 minutes.

Heat popover tin in oven for 5 minutes. Remove tin from oven; lightly spray cups with cooking spray. Fill each cup with 1/3 cup batter. Bake at 400 for 35 minutes or until puffed and golden.

Makes 6 popovers
