Introduction

A spicy dish, made with ground turkey instead of ground beef to save fat and calories. Serve with rice, low fat sour cream or my favorite, corn tortillas! Ingredients

    1 Pound Lean Ground Turkey
    1 cup tomatillos diced (approx 5 or 6 small)
    1 large potato diced
    1 7oz can Chipotle peppers in Adobo sauce

Directions

Makes six one cup servings. Calculator only used for main dish, not tortillas, sour cream etc you may use. Ground beef can also be used but it will much higher in fat. :)

1. Brown ground turkey in skillet, draining fat if necessary.
2. Add remaining ingredients, and 2 cups water. (dish can be made more spicy by chopping chipotles a bit, WAY spicy by blending them and less spicy by removing half of the peppers themselves)
3. Simmer for 30-45 minutes, letting the flavors blend and stirring occasionally. Add water as needed to avoid burning but boil down before serving for a thick sauce.
