Introduction

I was taught this recipe by my friends mom and make it quite often. I serve it with rice and corn tortillas, which are not in the calorie factor. This amount makes enough for two generous servings, but its very easy and VERY tasty! I was taught this recipe by my friends mom and make it quite often. Ingredients

    1 boneless skinless chicken breast cut into large pieces
    1 regular can diced or whole tomatoes
    .25 cup chopped onion
    4 cloves garlic minced

Directions

1. Spray skillet with Pam or use a bit of water, then add chicken, garlic and onion.
2. Cook until you can smell the garlic releasing its yummy smells, add tomatoes without draining.
3. Cover and cook on medium for 15 minutes or until chicken is thoroughly cooked. This dish also works wonderfully in the slow cooker.
