Spinach & Goat Cheese Strata

Ingredients

    8 slices Hollywood bread
    Pam
    1 tsp olive oil
    3 minced green onions
    2 cloves garlic, minced
    1 Large box of fresh spinach - steamed and squeezed dry
    1 tsp Splenda
    1/8 tsp nutmeg, 1/8 tsp black pepper
    2 large eggs
    3 large egg whites
    cup 1% milk
    4 oz soft goat cheese, crumbled.

Directions

Spray 8" pie plate. Chop bread slices into cubes and lay them in the pie plate and set aside.

In large skillet, heat the oil over medium heat. Add the scallions and garlic, and cook, stirring frequently, until the scallions have softened, about 2 minutes.

Stir in the spinach, sprinkle with the splenda, nutmeg, and pepper, and continue cooking until the spinach has softened and is heated through, about 4 minutes. Remove from the heat. Spoon the spinach mixture over the bread in the pie plate.

In a medium bowl, whisk together the whole eggs, egg whites, and milk. Pour this mixture over the spinach layer. Sprinkle with the cheese. Top with the remaining spinach, egg mixture, and cheese. Let sit for 30 minutes.

Preheat the oven to 350F. Bake the strata for 30 minutes, or until golden, puffed and set. Let stand for 10 minutes before serving.
