Introduction

Number of Servings: 19

Ingredients

    -11 cups homemade turkey broth, plus water to make 12 cups
    -1 leek (about 3 cups bottom and lower part)
    -2 stalks celery
    -2 cloves garlic
    -1 Tble olive oil
    -seasonings--to taste: salt, peper, sage, rosemary, bay leaf
    -4 cups sweet potato, cubed (about 2 small)
    -2 cups frozen corn
    -2 cups chopped turkey, mixed light and dark meat
    -1 15 oz can, drained, black beans (about 1.5 cups of beans)
    -5 cups chopped kale

Directions

-Saute leek, cerery and garlic in oil and a little salt till soft, in large soup pot
-add rest of seasonings
-add stock and water
-add sweet potato; cook with lid on, med heat, till potatos just done
-Add kale, corn, turkey and beans; cook another 10-15 min

makes about 19 1-cup servings
