William's Veggie Chili

Introduction

Number of Servings: 8

Ingredients

    1 15 oz can garbanzo beans
    1 15oz can dark red kidney beans
    1 15 oz cans crushed tomatoes
    1 15 oz can stewed tomatoes
    1 15 oz diced tomatoes
    1 cup shredded carrots
    2 cups celery, chopped
    1 large red bell pepper, diced
    1 large green bell pepper, diced
    1 medium red onion, chopped
    1 medium or large yellow onion, diced
    2 TBS chopped fresh parsley leaves
    4 cloves of garlic, chopped
    1 tsp EVOO
    4 TBS chili powder
    Salt/pepper to taste

Directions

Add EVOO to a large sauce pan over medium high heat. Add fresh vegetables and let cook for about 5-7 minutes stirring often.

Combine remaining ingredients in a bowl mixing well and add to saucepan then cover and reduce heat to lowest setting. Bagged dry beans work well too; however, if canned beans are used, drain them first before adding to pan. Stir periodically. Let simmer for about 90 minutes. As an alternative, dump all ingredients into crock pot and cook on highest setting for 2 hours and turn to lowest setting and let continue to cook for an additional 4-5 hours. Optional: add ground red pepper to taste.
