Introduction

Ingredients

    1 lb Lean Ground Beef
    1 Onion, chopped
    2 bay leaves
    1 28 oz can italian diced tomatoes
    1 14.5 oz can diced tomatoes, no salt added
    1 14.5 oz can low sodium beef broth
    1 pkg frozen mixed vegetable, carrots, peas, green beans etc.
    1 cup uncooked whole wheat pasta, broken into 1 inch pieces if using spaghetti, or you can use macaroni
    2 cans water
    Salt and Pepper to taste

Directions

Cook ground beef with onions until meat is done. Drain excess fat if desire, I left it in for flavor, it's calculated in the recipe. Add canned items, including water, frozen vegetables and bay leaves. Bring to a boil then reduce heat and simmer covered for 20 minutes. After 20 minutes increase heat to medium high and add pasta, cook covered for about 8 minutes, then serve.

Should make around 10 one cup servings.
