Coconut Pumpkin Pie - crustless

Not traditional but so good.
It is excellent baked in a crust but I left it off to reduce the colories.

Number of Servings: 8

Ingredients

    2 c. cooked pumpkin
    1/2 c. sugar
    5 tsp brown sugar
    1/4 c. egg substitute or 2 egg yolks
    pinch of salt
    1/2 T softened butter
    2 T Nestle Coffee Mate FatFree French Vanilla Creamer or other creamer or evaporated milk
    Few drops of each of the following:
    almond, lemon and vanilla extract
    Dash of allspice, cinnamon, nutmeg and cloves
    Stir in :
    1/2 c coconut
    1/2 c raisens or craisins
    1/2 c chopped walnuts
    a bit of lemon and orange rind

Directions

Mix all together. Pour into pie pan.
Bake at450 for 10 min
Reduce heat to 350 and cook for 30 min. or until firm in center.

Serve with Lite Cool Whip if wanted.
Refridgerate left overs.
