Bayou Shrimp Creole

Ingredients

    1 cup chopped onions
    2 tsp olive oil
    1/2 cup chopped green bell pepper
    1/2 cup chopped celery
    1/4 tsp salt
    6 oz can Tomato Paste
    2 cups Water
    1 pound Shrimp, cooked
    3 cups cooked Brown Rice
    1/8 tsp cayenne pepper

Directions

Saute onion in oil fro a few minutes, stir in peppers and celery cook a minute more. Stir in remaining ingredients except shrimp and rice. Simmer for 20-30 min. Add in shrimp and serve over rice.
Makes 7 - 1 cup servings
