Mashed Parmesan Fauxtatoes

Introduction

Number of Servings: 6

Ingredients

    2 cups turnips, grated
    2 cups cauliflower, grated
    2 tablespoons butter
    1 teaspoon garlic powder or 1 clove fresh garlic, grated
    1 tsp salt
    1/4 cup heavy cream
    1/2 cup Parmesan cheese, grated (reserve 2 tablespoons for garnish, optional)

Directions

Steam grated turnip and cauliflower by placing in microwave safe bowl, cover tightly (Do not add any extra liquid), cook for 5-7 minutes on HIGH. Scoop cooked vegetables into a food processor or blender. This may need to be done in half batches, don't over fill your machine. Add butter, garlic powder, and salt; process until smooth. Add cream and cheese; pulse until combined. Transfer to serving bowl and sprinkle with reserved cheese.
