Sweet potatoes with Cuban Black Beans

Ingredients

Canned Black Beans, 28-30 oz
1 Med. Green Bell Pepper, finely chopped
Onions, raw, 1 medium, finely chopped
Red Wine Vinegar, 1/4 cup
Bacon - 2 Thick Slices, chopped into 1/4 inch pieces
Cheese shredded low fat mexican, 6 oz
Sweet potato, 6 medium
Cilantro, raw, 4 tbsp
Garlic, 4 cloves, minced
Olive Oil, 1 tbsp
Cumin, 1 Tbsp
Salt, 1 Tsp
Pepper 1/4 tsp
Directions
Bake Sweet Potatoes in 350 degree oven for one hour.
Meanwhile, Saute bacon, onions, green pepper and garlic in Olive oil until bacon is cooked through and onions are translucent. Add black beans, red wine vinegar, cumin, salt, and pepper, and cilantro. Cover and Simmer until sweet potatoes are cooked.
Cut potatoes in half, top with half cup of beans, and one oz of cheese.
Optional: add salsa and low fat sour cream.
