Ingredients

1/2 cup olive oil
1/2 cup sugar - we use fructose
2 eggs
3 very ripe bananas - mashed
1 1/2 cups whole wheat flour
1 tsp baking soda
Directions
makes 1 loaf @ 14 - 1/4" slices
Preheat oven to 325
Cream oil, sugar, and eggs together. Add bananas.
Mix in flour & soda.
Pour into a prepared loaf or bread pan
Bake for 1 hour or until toothpick comes out clean.
Wrap in freezer paper or foil while still warm.
