Get a full days veggies in a bowl of soup that is delicious and will please a crowd of people. Goes great with a hard roll since you will be cutting calories with the soup. Number of Servings: 20

Ingredients

    4 c broccoli
    1 c diced celery
    2 c cauliflower
    1 c corn
    3 c diced potatoes
    2 c chopped carrots
    2 cans cream of chicken soup
    16 oz velveeta-cubed
    4 c water
    Chicken buillion granules per cup of water
    dried onions-optional or sub whole diced onion

Directions

Makes 20 1-cup servings
Boil potatoes, celery, onion and carrots for about 7-8 minutes or until slightly tender. Add all other veggies and boil until soft being careful when stirring. Add soup and cheese. Stir until melted. Add more water or chicken broth depending on your liking of thickness.Substitute any other vegetables that you like or increase/decrease the amount depending on your taste. Can make on the stove and transfer to a low heat crock pot if planning to use for a gathering.
