Tex-Mex Beef pizza

Introduction

On of our favorites - who says you can't have pizza on a low fat diet?
We always use the whole can of refried beans, mixed with 3/4 cup of salsa and then just freeze what you don't use.

We always use the whole can of refried beans, mixed with 3/4 cup of salsa and then just freeze what you don't use.

Ingredients

    1/2 cup fat-free refried beans
    3 tbsp salsa
    100 gm lean ground beef
    1/2 package (4 tsp) reduced-sodium taco seasoning
    1 12" diameter whole wheat Arabic flat bread (pizza shell, tortilla)
    1 oz grated reduced-fat cheddar cheese
    6 slices red tomato
    2 cups shredded lettuce
    6 tbsp salsa

Directions

makes 2 servings of 2 slices each

In a medium bowl combine refried beans & 3 tbsp salsa.
Place flat bread (pizza shell, tortilla, Arabic) on a baking sheet. Spread bean mixture over bread.

In a medium non-stick skillet brown ground beef over medium high heat. Reduce heat and add taco seasoning & 1/4 cup water; simmer 10 minutes, stirring occasionally. Until most liquid cooked off.

Spread meat mixture over the refried beans and top with grated cheese.
Bake at 400 for 5 - 10 minutes until the cheese has melted and the bread is getting crunchy.

To serve, top with salsa, lettuce and tomato slices.
