Soy Bean Hummus
1 c Dry soy beans - soaked and drained
3 tbl. Lemon juice
1/4 c Olive oil
2 tbl. Chopped fresh parsley
1 Garlic clove
Salt and pepper
Puree all ingredients in a food processor until smooth.
