Cabbage Salad (Lower Calorie Version)

Introduction

Ingredients

    Ingredients for dressing:
    1 T. olive oil, 1 T. flaxseed oil
    2 T. cider vinegar, 1 T. balsamic vinegar
    1 T. Splenda
    1/2 ramen noodle seasoning packet
    1/4 tsp. pepper
    1 T. low sodium soy sauce
    Ingredients for salad:
    1 sml. head red or green cabbage (26 oz.)
    2 green onions, chopped (1.5 oz.)
    1 carrot, peeled/grated (2.5 oz.)
    1 pkg. dry ramen noodles (3 oz.)

Directions

1. Make dressing by combining ingredients in a large bowl. stir to dissolve Splenda (it may look "curdled"...don't worry).
2. Combine the first three salad ingredients, toss well. Add crushed ramen noodles and dressing to salad and toss again.
3. Serve right away, or cover and refrigerate to allow the flabors to blend.
NOTE: I weighed all ingredients (incl. liquid) and came up with a total salad weight of 36 oz.)
