Introduction

You may add chopped cooked ham, bacon, sausage, or vegetables to mixture before baking. This recipe can be cooked, sliced, refrigerated and served multiple days. Just rehead a slice in microwave for 30 seconds. Nice make ahead breakfast. You may add chopped cooked ham, bacon, sausage, or vegetables to mixture before baking. Number of Servings: 6

Ingredients

    6 eggs, beaten
    1.5 cups milk or cream
    .5 cup flour
    5 scallions, sliced
    Salt and pepper to taste
    1 cup shredded cheddar cheese
    3 slices bacon, cooked and crumbled





Directions

Preheat oven to 350 degrees. Line a 15 x 10 in pan with foil. Coat with butter.

In large bowl, whisk together eggs, milk, flour, onions, salt, and pepper. When mixture is smooth, pour evenly into pan.

Bake 12 to 15 minutes until set. Sprinkle with bacon and cheese. Bake another 2 minutes.

Cool for 5 minutes. Carefully lift foil from pan. Starting from the smaller end, roll up the eggs, jellyroll style carefully releasing them from the foil as you roll. Slice into 1 inch slices and servie.
