1 medium onion, chopped
1 T butter
3 cloves garlic, minced
4 c low sodium vegetable (or chicken) broth
4 small baby red potatoes, diced
3 c frozen corn, defrosted
.5 c whole milk
Add veggie broth and potatoes and bring to boil. Partially cover and simmer for about 15 minutes until potatoes are completely soft.
Use an immersion blender to break up some of the potato chunks.
Add corn and simmer for another 5 minutes
Add milk and heat an additional minute.
