Family's Baked Beans

Introduction

Old fashioned home-made beans. Great with fresh bread. Old fashioned home-made beans. Great with fresh bread.
Number of Servings: 8

Ingredients

    3 c dry beans
    Soak overnight, boil until soft (without salt)

    When bean skins began to crack add 1/2 tsp soda, simmer for 20 minutes. Drain, rinse and return to kettle with fresh water. Add:

    1 large onion, chopped
    1 c grated carrot
    1 c grated zucchini/summer squash
    1 c ketchup
    1 tbsp dark molasses
    1/4 c brown sugar
    1/2 tsp Liquid Smoke (or to taste)
    1 tsp salt

    Mix. Bake at 350' for an hour.
    4 tsp yellow mustard (or 1 tsp dry)

    Serves 8
