Asparagus Salad

Ingredients

    1 cup asparagus cut into 1 to 2 inch pieces
    1 cup of chopped scallions
    1 tablespoon extra light olive oil
    2 tbs basil
    1/2 cup vegetable broth
    2 tablespoon cider vinegar
    1 teaspoon mustard
    1/2 teaspoon vegenaise
    1/2 teaspoon Splenda
    1 tablespoon fresh-squeezed lemon juice

Directions

1. Steam asparagus and scallions until asparagus is crisp-tender. Remove from heat and rinse with cold water. Drain and let cool.

2. In a small saucepan, heat olive oil over medium-high heat. Add remaining ingredients and cook for about two-three minutes. Remove from heat and set aside. Let cool. You may wish to place in the fridge (or freezer) just long enough to take away the heat.

3. Once above has cooled, tossed all ingredients together. Drizzle lemon juice.
