This is adapted from a South Beach Supercharged recipe. I loaded it up with canned chicken breast so I would get a nice protein punch. You could cut the chicken to help with calories or fat if you are concerned. I also did not use olive oil to cook my onions, just a little cooking spray. Ingredients

cooking spray
2 tbsp chopped onion
1/2 tsp minced garlic
1/4 tsp Spike seasoning
6 oz drained canned chicken breast
3 oz fresh spinach
1 oz low fat cream cheese, cubed
1 cup chicken broth (low sodium if preferred)
Directions
Spray pot with cooking spray and place over med-high heat. Add onions, garlic, and spike and cook until soft, about 5 minutes. Add chicken and spinach and cook until spinach wilts and reduces, about 3 minutes. Add cream cheese cubes and stir until melted. Add broth and bring to a simmer. Simmer 5 minutes, until heated through and flavors combine. Makes 1 very generous dinner serving.
