Ingredients

1 small potato
about 18 baby carrots chopped
3/4 c frozen corn
3/4 c frozen peas
3/4 c frozen green beans
4 med mushrooms sliced
1 shallot chopped
1 tbsp unsalted butter
1 can 98% ff cream of chicken soup (or mushroom/celery)
2 tbps cornstarch
2.5 c milk divided (2%)
2 c bisquck heart smart
Directions
Wash potato, prick with a fork and microwave for four minutes. Meanwhile in a small skillet saute the shallot and mushrooms in butter until tender. In a large skillet combine can of soup, 1.5 cups of milk, broth, chopped turkey, frozen vegetables and carrots add sauteed mushrooms and carrots to pan. Chop potato with skin on and add to skillet. Bring to a simmer. Mix cornstarch with warm water and add to simmering filling, allow to simmer until thickened. Pour into 9x13 pan sprayed with Pam. Mix bisquick and remaining milk, adding more milk if needed to make a batter the consistency of pancake mix. Pour evenly over top of hot filling, bake for 20-25 min in 400 degree oven. Makes 8 servings.
