Harvest Pork Cutlets

Number of Servings: 4

Ingredients

    2T spicy brown mustard
    2T low-sodium soy sauce
    dash black pepper
    4 4-oz boneless pork loin cutlets
    3T plain dried bread crumbs
    1/2 c thinly sliced onion

Directions

1. Preheat oven to 350.
2. In a small bowl, combine mustard, soy sauce, and pepper.
3. Place cutlets on rack in roasting pan and spread 1/2 T of mustard mixture on each side.
4. Top each cutlet with bread crumbs and onion.
5. Bake until meat is cooked through, about 30 minutes.
