Introduction

One of my family's favorite hearty soups for winter. Very easy to make. Could also exchange ground beef for turkey and use lower sodium V8, etc. to make healthier -- any suggestions welcomed! :) One of my family's favorite hearty soups for winter. Very easy to make. Could also exchange ground beef for turkey and use lower sodium V8, etc. to make healthier -- any suggestions welcomed! :)
Number of Servings: 8

Ingredients

    1 pound ground beef
    1 can (46 oz.) V8 juice
    1package onion soup mix
    1 package (3 oz.) beef ramen noodles
    1 package (16 oz.) frozen mixed vegetables

Directions

Cook & drain beef. Add all other ingredients except the noodles from the ramen. Bring to a boil; reduce heat & simmer, uncovered, for 6 min. or until vegetables are tender. Return to a boil; stir in noodles and cook for 3 min. or until noodles are tender. Makes 8 servings (1 cup each).
