Jamaican Jerk Chicken

Introduction

When the tropical fruit appears and you want to do something totally different... This is a bit spicy, which we love. Can also be (easily) modified for grilling-- simply grill the chicken w/ the rub, and serve with the fruit and veggies grilled as sides. Number of Servings: 4

Ingredients

    2 TB fresh thyme or 2 tsp. dried
    1/2 tsp. crushed red pepper
    1/2 tsp. salt
    1/4 tsp. allspice
    4, 4 oz., boneless, skinless chicken breasts
    1 sliced papaya
    1 sliced mango
    1 medium red onion, sliced
    1 yellow or red bell pepper, sliced

Directions

Heat oven to 375. Mix thyme, red pepper, salt and allspice and rub into chicken breasts.

Spray a glass baking dish w/ cooking spray. Place chicken in the pan and bake covered for 30 minutes. Turn chicken; Add other ingredients around the chicken and bake uncovered another 20-30 minutes.

Makes 4 servings. Easily doubled w/ more chicken and more fruit.
