I learned to make this with giblets from the bird, but make it with chicken leftovers because I don't normally get to cook the bird. Gravy may not be the healthiest thing we can eat, but this is a tradition in my family and making it with chicken breast is a healthier option. Ingredients

2 Tbls Flour
2 Tbls Butter
2 C or 1 Can of Chicken Broth
2 oz Chicken Breast (cut up or shredded)
Hard Boiled Egg
Seasonings to taste.
Directions
Melt butter in a sauce pan. Stir in flour until blended. Add chicken broth a few drops at a time (at first) and whisk into butter & flour mixture. By adding the liquid slowly, there is less chance of lumping. Once all the broth is incorporated, add the chicken and egg. Finally, open your spice cabinet and think about what would taste good in it. I use everything from garlic powder to poultry seasoning and pepper. Traditional Ms Dash is good in it too.
Makes about 10 servings of 1/4 cup each.
