Zuchini 1 small
Pasilla Pepper 1/2
Onion- yellow 1/4
Turmeric 1/2 tsp
salt and pepper
Squeeze lemon over veggies and add 1/2 tsp of turmeric, cover and cook on low heat for 30 mins, checking for sticking periodically ( you may need to add a bit of water) Salt and pepper to taste. I eat this with Farro or Pita.
