Basic Meatloaf for 2 (lower sodium content) (Crock Pot Recipe)

Introduction

Low(er) sodium meatloaf. This recipe is using a 93/7 mixture of ground beef. 1 serving will be approx 5 ounces of cooked product.

I am using chia seeds in place of bread crumbs to really reduce sodium content, you can easily use regular bread crumbs but that will raise the sodium content another 2-300 mg on average per serving, putting it closer to 500 mg sodium.

Number of Servings: 2

Ingredients

    1 tsp garlic powder
    1 tsp oregano
    3 TBS Minced Onion (or 1/2 cup chopped fresh onion)
    .5 tsp black pepper
    .5 tsp Nu Salt (or any salt substitute)
    3 Tbs No salt added Ketchup
    1/4 cup chia seeds
    8 Oz. 93% Lean Beef
    Egg White from 1 large egg
    1 TBS BBQ Sauce




Tips

Makes 2 approx 4 ounce servings.


Directions

Mix together all ingredients chia seeds and meat. Add chia seeds, mix thoroughly and combine well with ground beef.

Form into a size that fits your crock pot ( I have a small round 3.5 quart) and cook in Crock Pot on low for 4-6 hours, always check temperature of cooked beef and adjust cook times as needed.
Top with shredded cheese 5-10 minutes before serving (if desired, Cheese is not included in nutrional information for this recipe.
