Low(er) sodium meatloaf. This recipe is using a 93/7 mixture of ground beef. 1 serving will be approx 3-4 ounces of cooked product.This uses a local brand of Cracker Crumbs that only has 10 mg sodium per 1/4 cup, you can easily use regular bread crumbs but that will raise the sodium content 2-300 mg on average per serving. Ingredients

1 tsp garlic powder
1 tsp oregano
3 TBS Minced Onion (or 1/2 cup chopped fresh onion)
.5 tsp black pepper
.5 tsp Nu Salt (or any salt substitute)
1/2 cup raw onions
1/4 cup shredded cheese (optional as topping)
1/4 cup + 2 Tbs Cracker Crumbs
6 Oz. 93% Lean Beef
Egg White from 1 large egg
1 TBS BBQ Sauce
Tips
Makes 2 approx 4 ounce servings.
Directions
Mix together all ingredients except bread crumbs and meat. Add bread crumbs, mix thoroughly and combine well with ground beef.
Form into a size that fits your crock pot ( I have a small round 3.5 quart) and cook in Crock Pot on low for 4-6 hours, always check temperature of cooked beef and adjust cook times as needed.
Top with shredded cheese 5-10 minutes before serving.
