Greek Garden Salad

Introduction

A hearty whole meal salad A hearty whole meal salad
Number of Servings: 8

Ingredients

    1/2 chopped sweet walla walla onion
    1 large english cucumber, chopped
    2 sweet red peppers
    20 cherry tomatoes
    1/2 cup feta cheese
    1 cup calameta olives
    1/4 cup flax seed oil
    1/8 cup olive oil
    1/4 cup balsamic vinegar
    1/4 cup aple cider vinegar
    1 tbsp italian seasoning
    salt & pepper to taste
    6 cups mixed baby salad greens

Directions

Toss all chopped vegetables in large bowl. Mix the vinegar and oils, in a small bowl. Add the Italian seasoning and salt and pepper and stir well. Pour over veggies and toss to mix. Add the feta cheese and olives. let stand for 15 - 20 minutes.
Portion salad greens on serving plates, top with veggies and serve.
Serves 6-8
