Venison Chili

Introduction

Ingredients

    1 lb ground venison
    2.5 cups tomato sauce
    2 cups diced tomatoes
    1 cup chopped onion
    1 cup chopped bell pepper
    3 jalapeno peppers, chopped
    3 Tbsp chili powder, divided
    5 tsp. garlic salt, divided
    1/2 Tbsp red pepper flakes, divided
    1/2 Tbsp black pepper, divided
    3 tsp. tabasco sauce

Directions

Brown venison in a nonstick skillet until mostly done. Add onions, bell pepper and jalapenos. Sprinkle with 1 Tbsp chili powder, 2 tsp garlic salt, 1/4 Tbsp red pepper flakes and 1/4 Tbsp black pepper. Continue cooking (about 5 minutes) until onions and peppers are tender. Drain excess grease.

In a large soup pot, combine tomato sauce, tomatoes, tabasco sauce and meat mixture. Stir in 2 Tbsp chili powder, 3 tsp garlic salt, 1/4 Tbsp red pepper flakes and 1/4 Tbsp black pepper. Simmer on low heat for 20 minutes.

Makes 8 2-cup servings.
