Quick Breaded Chicken

Introduction

Serve with Marinara sauce and speghetti squash or whole grain pasta. Serve with Marinara sauce and speghetti squash or whole grain pasta.

Ingredients

    3/4 cup panko breadcrumbs
    1/4 cup grated parmesean cheese
    1 tbsp italian seasoning
    3 tbsp dijon mustard

    4 4-oz chicken breasts, pounded to equal thickness.

Directions

Mix breadcrumbs, cheese and seasoning in a shallow dish.

Coat both sides of each chicken breast with the mustard. You may not need all of it.

Dip the chicken in the breadcrumb mix, turning to coat.

Place the chicken in a sprayed baking dish and cook at 375 for 15 minutes. Flip chicken and cook 15 more minutes or until done.
