Artichoke Dip RECIPE

Introduction

Serve this delicious dip with low carb vegetables like green pepper strips, celery sticks, and cucumber slices. Serve this delicious dip with low carb vegetables like green pepper strips, celery sticks, and cucumber slices.

Ingredients

    • 1 cup mayonnaise
    • 1 cup grated parmesan cheese
    • 1 can artichokes packed in water, drained
    • dash of garlic salt

Directions

1. Mix all ingredients in a food processor and purée until artichokes are chopped fine.

2. Pour mixture into 8” x 8” glass baking dish. Bake at 350° F until bubbly, about 30 minutes.

Serves 16.

    Always yummy. I cooked fresh artichokes for 45-60 minutes in a steamer pot and Saved some of the outer leaves as dippers. Fewer calories than crackers or chips. also used low fat sour cream one time and low calorie mayo another. Super.I do like to add lemon juice/tabasco sauce to add a little zip. - 5/11/09

    Since I came to SP my use of mayo has decreased to half or less than most recipes call for and I like it just as well.
    I keep roasted garlic on hand,it's easy to make and keeps well.That and 3 tbl.mayo was my only substitution.I rarely use salt but a dash of white pepper was good in this...Chef Jim - 2/9/09

    I made this today with light sour cream instead of mayo and didn't cook it. I took it to a pool party and got rave reviews. Next time I'll have to follow the cooking directions. :-) I'm sure it'll be another huge hit. - 6/14/08

    This is yummy. I also had a can of asparagus on hand that I added to this. Next time I will chop the veggies instead of pureeing them, but this was very good!! Thanks! - 6/12/08

    My hubby's been making this for over 25 years! It's always requested when we bring something to a party. He chops the artichokes and adds 1/2 t lemon juice, then tops the mixture with bread crumbs before baking. He uses a paper towel to dab up excess oil after baking. Thanks for healthier ideas. - 6/11/09

    This is a fantastic recipe. Sub low fat mayo and throw in fat free sharp cheese. Yeah good soap opera snack with low fat triscuits and slices of cucmbers. - 2/9/09

    I use garlic powder instead of garlic salt, low-fat mayo, and the second time I made it, I used a low-fat Italian blend of cheeses - mozzarella, provolone, parmesan, romano, fontina, and asiago plus some extra parm. Amazing!! - 10/22/08

    This is a great appetizer and everyone loves it! Using fat free mayo in place of regular and garlic powder instead of garlic salt cuts the calories down to 46.3 per serving!! With low fat / sodium trisuits, it's a healthy appetizer that you can incorporate into your meal plan! - 6/11/08

    Great recipe! I use canola mayo (not sweet like other lowfat mayos) and use way less than the whole cup. I aslo don't totally puree, but leave it chunkey! We have on garlic Melba Toast. A little goes a long was and is very satisfying! - 6/11/08

    I am glad that I chose multi-grain tortillas for this one when I first made it because I had two servings. I have been making this recipe for about a year now and it is always a hit at get-togethers. I use light and reduced fat options and a little less mayo to get the same results. - 7/29/07

    I make this all the time for parties and it is always a hit. It's the recipe on one of the cans of artichoke hearts. Note how high the calorie count is, serving is probably a tablespoon or so. You can use a no fat mayo to reduce calories a bit. Not a "diet" recipe. - 3/26/07

  • This recipe is delicious, but why use all fat mayo??? We are trying to cut down on calories!! I recommend a couple of tablespoons of fat free mayo and nonfat Greek yogurt in place of unhealthy animal fat. No need to cook and coarsely chopped artichokes marinated in lime juice add to the taste! - 1/22/14

  • Yes,I eat a lot of artichoke hearts especially in my salads but love artichoke/spinach dip.Just remember to pull off the tough outer leaves on the canned or bottled artichokes as they are tough to eat and I love artichokes.Castroville,Calif.is artichoke capital of the world. - 11/30/13

  • 412 mg of sodium is pretty high for a couple of tablespoons of dip. There is sodium in the mayo, sodium in the parmesan, plus you add garlic salt? There are many more recipes elsewhere on the web that are healthier versions than this. - 11/30/13

  • I have used this recipe for many years. It is simple and very good.
    I do have an issue with the nutrition information. Why is there no portion size? Are we to divide the recipe into 16 equal servings to make sure we are recording our intake correctly? It seems that would ruin the presentation. - 6/11/09

    This has always been a favorite for parties. I serve it with low-fat Triscuits. It is so easy and you can make it ahead of time and bake it just before the party and the smell is so good.
