Chicken meatball and veggie soup

Ingredients

Carrots, 1 cup, grated
Onions, 1 cup, chopped
Celery 1 cup, diced
Extra Light Olive Oil 1 tsp
campbells' chicken broth in tetra pack, 3 cup
Unico Bean Medley 1 cup (1 can drained and rinsed)
canned diced tomatoes in juice, 1 cup
Extra Lean Ground Ground Chicken 454 gram(s)
Egg White, Naturegg Simply 2 Tbsp or 1 egg white
Garlic, 2 tsp
Ginger Root, 1 tsp
Italian Seasoning Blend (Mrs. Dash), 1/2 tsp
Directions
Saute onions carrots and celery in oil in med saucepan until tender. Add in chicken broth and tomatoes and bring to a boil.
mix together chicken and spices with egg white. Roll small balls dropping into boiling soup.cover lightly and simmer 20 minutes.
Serves 6 large portions. I like to serve with fresh chopped herbs or a small sprinkle of grated Parmesan cheese.
