Thai Boca Stir-Fry

Ingredients

    1 box Annie Chun's Pad Thai Rice Noodles
    water
    3 patties Original Boca
    1 cup chopped carrot
    10 oz bag of broccoli (if you like that much broccoli)
    1 medium bell pepper, chopped (about a cup)
    1 small onion (or to taste)
    McCormick Thai Seasoning
    2 Tbsp olive oil
    1 c. chopped mushrooms

Directions

Follow directions on noodles (basically, soak them in hot water). Put aside.

In a wok, pour 2 Tbsp olive oil; when hot, add 3 chopped-up Boca patties, chopped up onion, and 1 Tbsp. Thai Seasoning. Brown in wok.

Next, add vegetables and sauce. It may be a bit think, and after coating vegetables, add water as needed to prevent burning--perhaps add carrots first, so that they become tender during cooking (another option is to slice or grate them).

Drain noodles and add to wok. You may want to add a bit more sauce to taste.
