1 TB olive oil
2 cloves garlic, diced
3 quarts (12 c.) of fat free broth
12 oz. dried lentils
6-8 stalks of celery, diced
2 c. of diced carrots
1 c. diced onion
1.5 c. diced tomatoes canned, undrained
12 oz. 97% fat free ham, diced
bunch of kale, chopped into small pieces
Add the broth and bring to boil. Add lentils, reduce to simmer, and cook, covered, for 20 minutes.
Add diced celery, carrots, onion, and can of diced tomatoes (undrained). Cover and let simmer another 20 minutes.
Add diced ham and chopped kale. Cover and let simmer additional 20 minutes.
Serves 10 (hearty bowls of soup)
