This could be put into loaf pans or muffin pans. I made them into muffins for portion control. I modified this recipe from another member, so I can't take full credit. But they are delicious! Ingredients
-
Banana, (the ones that went brown), 4
Sugar, 1 cup
Milk, skim, 1/2 cup
Applesauce, unsweetened, 1/4 cup
Vanilla Extract, 1 tsp
Egg, fresh, 4 large
Flour, white, 2.5 cup
Whole Wheat Flour, 2 cup
Craisins, 1 + 1/4 cup
Cinnamon, ground, 1 tbsp
Salt, 1/2 tsp
Baking Soda, 2 tsp
Directions
Preheat oven to 350 degrees. Line muffin pans with 24 muffin tins and lightly spray with cooking spray.
Get two mixing bowls, put the wet ingredients in one bowl (bananas, sugar, milk, applesauce, vanilla, eggs) and mix with a hand mixer until fairly smooth. In the other bowl, put the dry ingredients (white & wheat flour, cinnamon, salt, baking soda) and using a fork stir until well blended.
Gradually mix the dry into the wet ingredients until thoroughly mixed. Then fold in the craisins using a spatula. Once all ingredients are mixed, using two large spoons, evenly distribute the mix into the muffin tins.
Bake for 20-25 minutes (keep an eye on them!), and voila! Breakfast is served.
If you're making this into a loaf, you will likely have to adjust your cooking time to be a bit longer, and you'll still want to spray the bread pans so they come out easy.
