Oatmeal Raisin Apple Cookies

Ingredients

    Quick Oats, 1 cup
    White Flour, 1/2 cup
    Whole Wheat Flour, 1/2 cup
    Cinnamon, ground, 1 tbsp
    Baking Soda, 1/2 tsp
    Salt, 1/2 tsp
    Brown Sugar, 1/2 cup, packed
    Butter, melted, 1/2 cup
    Apple, 2 medium, grated
    Egg, 2 large
    Vanilla Extract, 1 tsp
    Raisins 1/2 Cup

Directions

Preheat oven to 350 degrees.

Get two mixing bowls. Dry ingredients in one (oats, flour, wheat flour, cinnamon, baking soda, salt) and wet ingredients in the other (brown sugar, butter, apple, eggs, vanilla). Mix each bowl thoroughly before mixing together. Gradually mix the dry ingredients into the wet ingredients using a hand mixer.

Next, gently fold the raisins into the mix. Spray your cookie sheet where the cookies will be placed so that there is no chance of sticking. Using two spoons, spoon the mix onto the cookie sheet, it should come out to 48 cookies. Bake for 8-10 minutes (keep a close watch on them, overcooking them will cause them to be really dry!) and place on a cooling rack before serving.
