Spicy chicken soup

Introduction

Number of Servings: 8

Ingredients

    2 qts water
    8 skinless, boneless breast halves
    1/2 tsp salt
    1 tsp black pepper
    1 tsp garlic powder
    2 tblsp dried parsley
    1 tblsp onion powder
    5 cubes chicken bouillon
    1 tsp olive oil
    1 onion chopped
    3 cloves garlic
    1 16 oz jar salsa CHUNKY
    2 (14.5 oz) cans peeled and diced tomatoes
    1 (14.5 oz ) can diced tomatoes w/green chilies
    1 (10.75 oz) can tomato soup
    3 tblsp chili powder
    15 oz frozen corn
    1 (16 oz) can chili beans
    1 (16 oz) can black beans

    Toppings if desired: crushed tortilla chips, lowfat cheese, ff sour cream, diced green peppers, diced onions

Directions

1. In a large pot over medium heat, combine water, chicken, salt, pepper, garlic powder, parsley, onion powder, and bouillon cubes. Bring to a boil, then reduce heat and simmer until chicken is done. Remove chicken, reserve broth. Shred chicken.

2. In a large pot over medium heat, cook onion and garlic in olive oil until lightly browned. Stir in salsa. tomatoes, tomato soup, chili powder, corn, beans, chicken, and 5 cups of broth. Simmer 30 minutes. Top as desired.
