RB Dietetics Grilled Caribbean Chicken

Ingredients

    4 (4 oz) bonelss, skinless chicken breasts
    2 tsp lime juice
    1 tsp vegetable oil (or other oil)
    2 tsp jerk seasoning
    Cooking spray

Directions

1. Place chicken in between 2 sheets of heavy duty plastic wrap or waxed paper. Flatten to 1/4 inch thickness using a meat mallet or rolling pin.
2. Combine lime juice and oil. Brush over both sides of chicken. Rub both sides of chicken with jerk seasoning.
3. Coat grill rack with cooking spray. Cook chicken on grill over medium-high heat until done (165 degrees F) (~ 5-6 minutes on each side).

1 serving = 1 chicken breast
Yield - 4 servings
