Healthy refried beans

A nice Easy do ahead and make extra protein side.Try it in corn tortillas with some veggies on top and salsa for a fast meal.
If you want great Easy homemade beans without salt. Just soak dry beans overnight and then cook 8-10 hours in a slow cooker on low!! Make a lot and freeze in 1.75c batches to be the same amount as a can.

Ingredients
2 t olive oil
1 onion chopped
2 cloves garlic minced
2-4 jalapenos minced
.5-1 t each of cumin, chili powder, coriander and thyme
4 cups of beans, mixed kidney, pinto, black garbanzos, etc
Salt & Pepper
Directions
2 t olive oil

Saute till soft
add .5-1 t each of
cumin, chili powder, coriander and thyme
heat till aromatic
4 cups of beans, mixed kidney, pinto, black garbanzos, etc.
stir in to mix
when hot mash with potato masher.
Add a little S&P
Add water/broth/bean cooking water .5c at a time to help the beans not dry out - but don't make it too soupy.
Makes 8 1/2 cup servings
