Dixie's Chili Con Carne

Submitted by: DIXIETANGO

Introduction

A low carb favorite in our house. This is traditional chili con carne and that means no tomato sauce and no beans. It is to be served over steamed rice or cauli-rice for low carbers. Garnish with shredded Cheddar and/or sour cream. A low carb favorite in our house. This is traditional chili con carne and that means no tomato sauce and no beans. Ingredients

2 tablespoons olive oil or canola oil
    2 medium onions, diced
1 or 2 clove(s) garlic, minced or grated
3 pounds beef chuck roast, cut into one to two-inch pieces and trimmed
    1 teaspoon salt
    4 - 6 tablespoons chili powder (we use 6)
    1 tablespoon ground cumin
    1 teaspoon dried oregano leaves
1 teaspoon cayenne (we use about 3, make as hot as you like it)
4 cups really good beef stock (not broth!)

Directions

In a large saute pan heat oil over medium heat. Add onions and cook until translucent. Add garlic and cook for another minute or so. To this add the beef and salt. Stir fry until meat is no longer pink on the outside. Add chili powder, cumin, oregano and cayenne. Stir well to combine and allow to cook for 5 minutes. Add broth, stir well, bring to a boil. Reduce heat and simmer (with lid cracked a tad for venting) for 2 hours, stirring occasionally. Remove from heat and let stand uncovered for about ten minutes. Serve piping hot with rice (although it's great all on it's own too!).
