Creamy Broccoli Potato Soup

Introduction

With lots of calcium, vitamin C and fiber, a great hearty soup for those chilly nights With lots of calcium, vitamin C and fiber, a great hearty soup for those chilly nights
Number of Servings: 6

Ingredients

    1 Tsp. olive oil
    3 cloves garlic, chopped
    1/2. c. sweet onion, chopped
    2 large potatoes, diced, skin on
    2 large stalks celery, diced
    2 large carrots, chopped
    1 tsp. thyme
    4 c. water
    4 cubes chicken bouillon
    5 c. fresh broccoli chopped, florets and stems
    1 can (13 oz) evaporated nonfat milk
    1 c. shredded sharp cheddar




Directions

Heat oil in a large saucepan. Add potatoes, carrots, celery and onion. Saute' until just onion is beginning to turn translucent, and carrots and celery are fragrant. (about 5-7 minutes)Add garlic. Cook an additional 2 minutes.
Add bouillon cubes, water and thyme.
Cover and simmer for 20 minutes or until potato and carrot are tender.
Add milk and broccoli. Continue cooking, covered, over medium heat, about 20 minutes or until broccoli os tender. Add Cheese shreds, mix thoroughly until well incorporated. Soup will be thick and chunky. For a smoother, creamier soup, blend with immersion blender until smooth. You can also blend the soup before you add the broccoli.
makes 6 2 cup servings.
